Another kind of creative journaling is what’s called Art Journaling.  Instead of writing in your journal, you paint.  Or paste in pictures.  Or color with pencils or crayons or markers.  The sky’s the limit!  Anything but writing, that is.  Use whatever creative element you want to express yourself.

Bits of fabric?  Check!

Stickers?  Stamps?  Check!

Pieces of plants or other botanicals?  Check!

Pet fur?  Check!

Seriously, this is art for arts sake.  Express your feelings in art.  You cannot do it wrong.

French Onion Zucchini Bake | i am baker

So, you’re looking for a nice side dish to go with dinner.  Something tasty, not hard to make.  Something maybe a bit oo-la-la.  Maybe even something lower on the carb scale.

You definitely need to try this recipe.  French Onion Zucchini Bake

Being me, I made a couple of substitutions to the recipe.  I used 1 zucchini and 1 onion, and 1 6 oz package of shredded Swiss cheese.  It’s just a lot less pricey than Gruyere and more available to me.  Plus, I used a 10” skillet instead of a 12” since I’d kind of halved the recipe, as I knew my kids wouldn’t eat it.  They don’t like Swiss.  (!!?!)  Also, I omitted the sugar because #KetoGoals. 

I have to say, this may be one of my favorite vegetable dishes ever.  EVER.  Even my husband liked it and he doesn’t like onions.  Yes, it is that good! 

It takes maybe 10-15 mins to put together, and then you throw it in the oven for about half an hour, give or take.  I put it in during the last 30 mins of my roast cooking.  It’s also very forgiving.  One time, I did the stove-top part, and then didn’t put it in the oven until like an hour later, and it turned out great.  So easy!  And so yummy!

French Onion Zucchini Bake

  • French Onion Zucchini Bake combines the amazing flavor of caramelized onions, fresh zucchini, and piles of melty gruyere cheese for a side dish that is sure to impress!  If you love French Onion, make sure to check out my homemade French Onion Soup!

    First things first, let’s talk ingredients.  You will need:

    • Zucchini – We obviously prefer to use our garden zucchini, but if you have to purchase at the supermarket, select medium-sized zucchini that are firm and feel heavy for their size. They should be green or yellow with shiny skin.
    • Yellow Onions – There are a ton of different onions to choose from, but I stick with yellow onions because they have a signature sweetness when cooked.
    • Gruyere Cheese – If you are looking to substitute this with a different cheese you want to select one that melts very easily.  I would recommend a Compte’ or Jarlsberg.
    • Butter – We use unsalted in this recipe because we prefer to adjust the salt level by adding kosher salt at the end.
    • Worchestershire Sauce
    • Beef Broth
    • Granulated Sugar
    • Thyme – Fresh thyme can be substituted for dried but you need to adjust the amount.
    • Kosher salt and freshly cracked pepper

Last year, I wrote about wanting to be a better journal writer.  [Monday Musings]  This is something I’ve been trying to get back into for a couple of years now, but I’ve not been very consistent at it.  Part of the reason is due to the fact that I don’t have one of those exciting lives that others seem to have, so I find it hard to know what to write about.  “I felt redundant about washing the dishes” just doesn’t seem like a worthwhile journal entry.  That’s not a complaint, just an observation.  I draw blanks when thinking about where to start. 

Still, I feel compelled to write.  I’ve geeked out over stationery and pens and books and paper and writing my entire life.  I have a strong drive to understand things, and learn the why of things, and know things – about God, the world, my self, my relationships.  In my head, I am constantly journaling.  I am a journalist by nature, but in practice?  Well, that’s been another story. 

In my efforts to overcome that, I’ve been saving links to journal prompts that looked promising, that might give someone like me a place to start.  I’ve decided on the one from Boho Berry Challenge!  to begin with.  (I scrolled to the bottom and went to each post and printed up an entire year’s worth).  I picked up some inexpensive books from Amazon to write in.  I can get 2 months in each book (I can double up on the day when a month has 31 days as my entries probably won’t be that long) and I used some washi tape to stick the prompts right into the books, one to the inside front cover, one to the inside back.  Plus, the books are inexpensive enough and plain enough that I can decorate the covers if I want, so bonus creativity points. 

Sometimes, beginning is the hardest first step.  Prompts can help!

For the record, no, I’m not participating in the #BohoBerryChallenge because #IntrovetIssues, and I could never post such personal journal entries publically.  But I can totally support those who are participating.  🙂  This is my “play along at home” version.  😀

Duck and Grapes

A duck walks into a bar and asks, “Got any grapes?”

The bartender, confused, tells the duck no. The duck thanks him and leaves.

The next day, the duck returns and asks, “Got any grapes?”

Again, the bartender tells him, “No — the bar does not serve  grapes, has never served grapes and, furthermore, will never serve grapes.” The duck thanks him and leaves.

The next day, the duck returns, but before he can say anything, the bartender yells, “Listen, duck! This is a bar! We do not serve grapes! If you ask for grapes again, I will nail your stupid duck beak to the bar!” The duck thanks him and leaves.

To the bartender’s surprise the following day the duck returned. The duck is silent for a moment, and then asks, “Got any nails?”

Confused, the bartender says “no.”

“Good!” says the duck. “Got any grapes?

So, here’s a post that’s more on the difficult side for me to write – journaling and/or brain dumping for mental health. 

Mental health is a serious issue for a lot of people.  Even for those not diagnosed with a specific issue like ADD, depression, or something on the spectrum, there can be mental health challenges that can have an impact on our daily lives. 

For me, it hit hard last year when my blog friend Minaxi died, suddenly.  She died right around my brother’s birthday, during a “milestone” anniversary of his death.  I was already trying to “brace for impact” for that week, when I learned of Minaxi’s death. 

Needless to say, I felt overwhelmed.  I also realized that I’d not been dealing well with lots of things, for a long, very long, time. 

All that stuff builds up, it festers, it impacts you in ways you can’t even imagine.  Realizing I was an empath, I learned I am pretty good with other people’s feelings, but horrible with my own.  I can help other people navigate and understand their own issues, but when it comes to my own, I freeze like a deer in the headlights until I’m absolutely gobsmacked by the impact of them. 

So, I’ve been trying to untangle that mess and I learned that journaling can be a wonderful form of therapy.  It can be targeted and specific to a time, place, person, or event.  Unsent letters can help a lot here.  Writing about the wounds can help cleanse and heal them, help us get past them.  Yes, it’s scary, and I know that personally.  This is one of the more frightening things I have to face, and if you knew some of the things I’ve faced, you know how huge that statement is.  Staring down the barrel of my own emotions is terrifying for me.  I push them down and bury them for a reason, and digging them all up again won’t be any more pleasant than it is for any other body that gets disinterred.  Nobody wants to see, or smell, that, especially me.

Nevertheless, the work must be done and journaling is a great way to begin it, and a lot less expensive than a therapist!  I even picked up a journal expressly for this purpose, and I call it my “Mourning Pages.”  I give my journals people names, too, so it feels like I’m writing to a pen pal or a friend who lives far away.
